How to Use the Brinkmann Smoke 'N Grill

The Brinkmann Smoke 'N Grill is a combination charcoal smoker and grill. This means that you not only can use it as a smoker but also as a grill. However, using the smoker requires curing, which is the process of coating the inside of the grill to protect the metal. Once the smoker has been cured, you are then ready to use it to prepare food.
  • Cure the Smoker

      Pull the water pan out of the smoker. Fill the water pan with warm water. The water pan will hold about a gallon of water.

      Apply vegetable oil to a clean cloth. Wipe the interior of the smoker and grill with the cloth. Coat the entire surface with the vegetable oil.

      Place charcoal into the charcoal pan. Add a small amount of starter fluid to the charcoal and light with a match or starter stick.

      Set the cooking grills on each of the support brackets.

      Allow the charcoal to burn for a few minutes and then close the lid or dome.

      Let the charcoal burn for at least 20 minutes to reach the proper temperature. This is the "Ideal" setting on the heat indicator. Let the charcoal burn at this temperature for another two hours and then allow it to cool.

    Cooking Preparations

      Remove the lid or dome. Take out the cooking grills and the water pan. Set these aside.

      Fold the edges of a piece of tin foil to use as a drip pan. Place the drip pan under the base pan. This will catch any drips from the smoker.

      Open the door of the smoker. Verify that the charcoal pan is resting on the notches that are located on each leg.
