Sunflower seeds are packed with nutrients such as Vitamins E, B6, selenium, manganese, magnesium, copper, thiamin and phosphorous, all of which are needed to maintain a healthy body. They are also low in cholesterol, salt and carbohydrates before being processed. Carbohydrates or carbs give the body energy, and the number of carbs in a portion of sunflower seeds depends on how they are processed and how many grams of fiber they contain.

    Dried Sunflower Seed Kernels

    • The American Diabetes Association (ADA) recommends subtracting one half of the grams of fiber from the grams of carbohydrates in a portion of food when the grams of fiber is equal to or greater than 5 to find the net carbs for that food.A cup of dried sunflower seed kernels with hulls contains 9 grams of carbs, but only 4 grams of fiber. The net grams of 1 cup of dried sunflower seed kernels with hulls is 9 carbs.

    Dry Roasted Sunflower Seed Kernels

    • One cup of dry roasted sunflower seed kernels without hulls contains 31 grams of carbs and 14 grams of fiber.Subtract half of the fiber grams from the grams of carbs according to the ADA, and you have 31 grams - 7 grams=24 grams of net carbs in 1 cup of dry roasted sunflower seed kernels without hulls.

    Toasted Sunflower Seed Kernels

    • One cup of toasted sunflower seed kernels contains 28 grams of carbs and 15 grams of fiber. Subtract 7.5 grams of fiber from 28 grams of carbs to get 20.5 net carbs.

    Raw Sunflower Seeds

    • One cup of raw, unprocessed sunflower seeds that include hulls typically has 28 grams of carbs and 8 grams of fiber. Subtracting 4 grams of fiber from the 28 grams of carbs gives you 24 net carbs in 1 cup of raw, unprocessed sunflower seeds.
