What Affects Mold Growth on Bread?

Bread molds fastest at room temperature and in a humid environment. Refrigeration slows the growth of mold, and freezing is effective in preventing mold. Preservatives in commercially prepared bread also delay mold growth.
  • Identification

    • Mold is a fungus that grows on many kinds of foods and other organic materials. Mold spores spread easily from one surface to another and reproduce quickly. Mold generally appears to be white or gray, but can be a variety of other colors depending on the type of fungus.

    Considerations

    • Although mold grows more slowly in the refrigerator, bread becomes stale more quickly at cooler temperatures. Consider freezing bread to preserve its freshness until it is needed.

    Warning

    • If you find visible mold on a loaf of bread, do not eat the rest of the bread, even if it appears to be untouched. Some molds produce toxins that spread throughout their food source, beyond the visible growth.
