E472a emulsifiers are scientifically known as acetic acid esters of mono and diglycerides of fatty acids. The additive is prepared by mixing the ester of glycerol (E422) with acetic acid (E260) and edible animal or vegetable fats.
Usage

E472a is frequently used to aerate high-fat content food such as whipped cream, cheesecake and mousse, as it joins fat globules together and helps to provide a stable foam. E472a can be manufactured as a thin film and used to cover meat, nuts and fruits as it visually enhances and preserves the shelf life of a product. The protective wax that covers cheese often contains the E472a emulsifier.
