Open a 1 lb. box of instant mashed potatoes. Pour the instant mashed potato flakes into a airtight plastic container that comes with a tight-fitting lid. Secure the lid on the container to protect the mashed potato flakes from exposure to humidity and insects.

Cut out the portion of the box that instructs you on how to make different serving amounts of mashed potatoes. Use your permanent marker to write down the date you're opening the mashed potatoes on the bottom of the preparation instructions.

Tape the preparation instructions and box-opening date on the side of the airtight plastic container. Use clear packing tape to keep the cardboard from falling off of the container.

Store the container of instant mashed potato flakes in a pantry with a temperature of 70 degrees Fahrenheit. The mashed potato flakes should keep for six to 12 months in these conditions.
