How to Use a Chefs Choice 310 Knife Sharpener

The Chef's Choice 310 knife sharpener is a popular device that can efficiently sharpen any flat blade knife. This particular sharpener has two stages, or sharpening slots. The first stage gives a rough sharpening, and the second provides additional sharpening and smooths the blade. The Chef's Choice 310 knife sharpener also has electrical magnets which automatically force the knife into the correct sharpening angle, for a worry-free process.

Wipe the knife blade clean with a damp paper towel to remove any loose debris. Dry the blade with a dry paper towel.

    • 2

Place the Chef's Choice 310 knife sharpener on a flat, sturdy surface and plug it into an electrical outlet. Flip the power switch on.

    • 3

Stand in front of the sharpener so that you can clearly see the Chef's Choice sticker and power switch. Place the sharp side of the blade in the left sharpening slot. The base of the handle should be pressed against the edge of the sharpening slot.

Press down on the handle and pull the knife toward you until the tip of the blade comes out of the sharpening slot. The blade must be in contact with the sharpeners the entire time. Repeat the process for 10 seconds if you are resharpening the blade. If this is the first time you are sharpening the blade, repeat the process for one to two minutes.

    • 5

Move the knife to the sharpening slot on the right. Repeat the same movements you did in the first sharpening slot. Again, sharpen for 10 seconds if you're resharpening the blade, and if it's the first time sharpening the knife then sharpen it for an additional 1 to 2 minutes.
