Harvesting
-
The harvesting of turnips must occur before the temperature outside reaches 80 degrees Fahrenheit and a light frost will improve the flavor of the turnip. Turnips are not intended to be harvested during months of warm weather.
Storage
-
Turnips, like all root vegetables, are best stored in a cool place. According to The Essential Garden Guide, "Common storage is in a root cellar. Dig, cut off stem 2" to 3" above the roots and store covered with sawdust or other material in a cool (32 to 40 degrees) moist location. Turnips will keep in the refrigerator crisper drawer for several months." Freezing is also an option for storage.
Preperation
-
Turnips are grown all over the world; therefore, they are used in many different cuisines. Because the meat of the vegetable is hard and tough, boiling is a common preparation. The greens that grow from the top of the turnip are also boiled, usually with smoked pork and served with spicy vinegar.
