Both apple peels and apple cores are ingredients for homemade pectin. Pectin is usually extracted from plants such as citrus fruits or apples. When apple peels are boiled, gel-like pectin is created and can be used in recipes.
Significance

Apple peels do not dissolve whether they are placed in boiling water to make pectin, baked in an oven to make apple pie or used to make applesauce. After these processes, all that's left is a thin, soft, soggy peel that has to be removed by hand using a strainer or sieve, according to a number of recipes.
Other Uses

You can simply discard the undissolved peels or put them to other uses. For example, you can add them to drinks for decoration or fry them to make snacks. You can also store apple peels for future use after they are boiled, baked or frozen. Pectin made from them may be stored in jars.
