Light Brown Sugar Substitute

Because brown sugar consists of only cane sugar and molasses, a light version of it can be mixed and made at home. The main types of brown sugar, light and dark, are differentiated only by the amount of molasses they contain.
  • Dark Brown Sugar

    • Mix together equal parts dark brown sugar and granulated white sugar. For example, if a recipe calls for 2/3 cup of light brown sugar, substitute 1/3 cup dark brown sugar plus 1/3 cup granulated white sugar.

    Using Molasses

    • Mix 1 1/2 tbs. molasses into 1 cup of granulated white sugar to make 1 cup of light brown sugar. If the brown sugar will be mixed in with other ingredients, add the sugar and molasses separately instead of mixing them together first.

    Considerations

    • Pack brown sugar firmly into the measuring cup to get the correct amount. The brown sugar should hold the shape of the cup when it is dumped out. If the brown sugar isn't packed firmly enough, the recipe will not get all of the brown sugar it's supposed to.
